Low Carb Pumpkin Spice Latte
The pumpkin spice latte is a very popular warm fall drink when you go to coffee shops, but you can also prepare them at home! This particular recipe has the bonus of also being a low carb recipe, so yay for that!
Here’s how you do it:
- Stir ¾ cup heavy cream and 3 tablespoons canned pumpkin over medium heat in a saucepan.
- Add in 2 tablespoons of sugar substitute, 1 teaspoon pumpkin spice, and 1 dash of nutmeg.
- Remove from heat and blend for about 20 seconds.
- Pour the mixture in a large cup and add ¾ cups hot coffee.
- Enjoy this delicious homemade latte!
Tip: For the sugar substitute, try: raw honey, maple syrup, or Stevia!

- 1 cup vanilla flavored rice milk
- 2 tablespoons pumpkin puree
- 2 teaspoons cocoa powder
- 3 dashes pumpkin spice
Mix all the ingredients together while heating on low heat until smooth. This part is optional, but you can also add a stick of cinnamon to make it even more special. Then it’s ready to serve!

Cranberry Apple Cider Punch
This recipe from Mel’s Kitchen Cafe is incredible and very festive! You can make it for a special dinner party and it’s guaranteed to be a huge success.
The ingredients are:
- 1 cup fresh cranberries
- ⅓ cup water
- ½ cup granulated sugar
- 4 cups apple cider
- 2 cups ginger ale
- 2 tablespoons fresh lemon juice
- 2 cups cranberry juice
The directions you need to follow:
- Combine cranberries and water in a small saucepan and simmer until the cranberries pop.
- Remove from heat and add the sugar stirring until combined.
- Chill in the refrigerator for 1 to 2 hour.
- Pour the mixture in a 2-quart pitcher and mix in the remaining ingredients.
- Serve with crushed ice!
Butternut Squash Soup
Okay, so, imagine this:
It’s Sunday afternoon and the weather is just about perfect - not too hot nor too cold. You sit near the window and observe the landscape with leaves fallen down, a mix of brown, yellow, and just a pinch of green. The sun is hidden behind some clouds in the sky making the day look like a beautiful movie scene.

This butternut squash soup! What makes it perfect for fall is the mix of the butternut squash, tart apples, and apple cider - so creamy and delicious!
Pumpkin Spice Cider
This recipe is a wonderful mix of all the autumn flavors - it’s really amazing!
You will need:
- 1 quart natural apple juice
- 1 cup cranberry juice
- 1 teaspoon pumpkin spice
- ¼ cup honey
- 4 orange slices
Stir together in a saucepan the two juices, pumpkin spice, and honey. Once the honey has completely melted, let it boil over low heat and simmer for about 20 minutes. Garnish some glasses with the orange slices and pour the cider.
The final touch:
Add a cinnamon stick into each glass!

I love having some finger food near me whenever I’m studying or working; when I start losing focus I just have a bite and then I’m back on track!
